I just now switched the bluetooth configuration in Pavucontrol accidentally to "Off". I then tried to switch to the "Headset" configuration and it waits a second then displays "Connecting to Pulseaudio..." and I hear a short beep in my headphones and it is again "Off". Same thing with "High Fidelity" configuration, it switches the configuration back to "Off".
